MCIE can deliver the Certificate III in Commercial Cookery as an apprenticeship program. This enables you to simultaneously study while being actively engaged in the workplace thereby minimising the time spent out of the kitchen.

How can I study?

This qualification is delivered as an Apprenticeship. It is also available as classroom delivery.

This nationally recognised qualification is designed for emerging Chefs, allowing them to acquire the skills and knowledge required to become a chef, all while working on-the-job. This course lays the foundations for restaurant cookery, knife skills, food safety practices and more.

Your studies and apprenticeship in commercial cookery will also equip you with skills in financial, workplace safety, team and kitchen organization. You will be trained in all aspects of food preparation and work as a cook in a busy kitchen.

  • Units: 21 core & 4 elective units

  • Location: Employer site. (Some theory classes may be required at 9/250 Collins Street, Melbourne, VIC, 3000 & some practical classes at 644 Victoria Street, North Melbourne, VIC 3051)

  • Delivery Mode: This qualification is delivered through a blend of formal face-to-face classes at MCIE campus and/or training kitchen, self-paced and workplace delivery. Contact on a monthly basis is the minimum requirement depending on the blend

  • Assessment: Oral and written tasks and simulated or workplace practical observations

  • Duration: 36 months

  • Prior experience: RPL & Credit Transfer is available

  • be an Australian citizen or permanent resident
